Pizzoccheri is typical pasta from Valtellina, a Lombardy district north of Como Lake, well known for great food and wine products. Maltagliati dough needs buckwheat flour, and wants to be paired with potatoes, vegetables, cheese from mountain dairies, and plenty of melted butter. The recommended wine is a red Valtellina Superiore Docg.
