Muggia is a seaside resort near the Slovenian border. Its historical centre is a small jewel full of Venetian atmosphere. The Trieste Bay and the Carso highlands stretch in front; while the picturesque Istrian coast with its towns stretches in the back. Vilma, the landlady, reminds the 50s when she started to run her business recommending her prawn risotto, an unusual speciality for a trattoria. Nowadays, Giorgio, Vilma’s son, has partnered and their cuisine mainly based on fi sh is really top rank thanks to excellent ingredients and to innovation of traditional dishes.

Ravioli di mare con scampi alla buzara
The word ‘buzara or busara’ has two meanings: ‘stew’ to some, and ‘fish soup’ – a typical dish in Istria and Dalmatia to others. Whatever the case may be, the noblest version of this recipe wants prawns, onion and garlic - finely chopped, a glass of white wine, peeled tomatoes, and herbs. This preparation is the cook’s secret, as well as the idea of using it to stuff the delicious ravioli.
