Mattias Peri is a determined young chef with ideas as bright as the sky over Pizzo Bernina: fi rst quality ingredients, mainly local, but not only. This means that traditional recipes are innovated and food acquires sublime taste; as far as the look of dishes is concerned, it is really artistic!

Ravioli di segale ripieni di polenta cuncia con salsa di porcini trifolati e scaglie di grana

‘Cuncia’ means ‘acconcia’, i.e. polenta with a lot of ingredients - beyond imagination – cheeses from the near valleys, melted butter,and thyme. The brilliant idea is to use it to stuff ravioli made from rye sfoglia. The homemade sfoglia is made from 32 yolks and rye flour – the typical grain grown in the Alps. Accurately studied is the final touch to this dish: grana grosino cheese, specialty of Grosio Dairies.
