Involtini di pesce spada

Swordfish traditionally fished in the Messina Bay is the main ingredient of the Sicilian cuisine. To prepare this dish fresh swordfish is needed, First of all, the fish is finely sliced, then stuffed with finely chopped swordfish sautéed with onion, pine nuts, raisins, breadcrumbs, and chopped parsley, and finally rolled. Next, the involtini is shortly grilled. Then, the involtini is dished out topped with "salmoriglio" sauce - made whisking olive oil, lemon juice, garlic, and Mediterranean herbs.
