This dish is a work of genius as far as the style and the taste is concerned. The chef uses a see-through foil that allows a fine view of the food and its buoyant steam. Rabbit and shrimps are deliciously grilled in foil with vegs in season and no cooking-fat. Once the cartoccio is opened and the aromatic steam released, you will be impressed.
