"Spinosini" is a kind of pasta. Pasta is a local tradition; in fact the egg-pasta namely maccheroncini of Campofilone are celebrated all over the world. The sauce is a combination of sea and farming products: clams, scampi, and finely sliced courgettes with a final dash of cream and saffron. A superb dish that deserves a fine wine such as the excellent local Falerio dei Colli Ascolani.
