Guazzetto di pesci e molluschi dell’Adriatico in pietra ollare

Pietra-ollare is used to make saucepans and pots for slow cooking. This is proved by the Buon Ricordo dish: "guazzetto" - a sort of slow stewing of Adriatic Sea fish and molluscs - that is an extraordinary concentration of taste. The special characteristic of this meal, a recipe of the fishermen, is that it changes every day as its ingredients depend on what fishermen catch and the fish-market offers. This is also an ideal opportunity of enjoying Verdicchio dei Castelli di Jesi a full-bodied white wine.
