Ravioli alla trota salmonata

You will be impressed by this dish for its pastel shades and the intensity of its taste the same shades of our lake scenery. The main ingredient is the salmon trout with its pinkish fleshy pulp that is used both for the ravioli filling mixed with chive and the sauce made with shallot, sweet marjoram, and tomato.
