Catania
Ristorante La Siciliana
of Salvo and Vito La Rosa Brothers
Situated on the hillside of the town, this 19th century villa full of atmosphere is the right place to taste typical dishes of the island. Among the Catania specialities: fresh handmade rigatoni alla Norma, with tomato, eggplant, and pecorino cheese, dedicated to the composer Bellini, ‘U ripiddu nivicatu’ is a work of art: a black cone of squid ink risotto – reproducing the Etna, on top ricotta cheese - that looks like snow, and a spicy red tomato sauce ‘sloping’ down that looks like hot molten streams of lava.
Buon Ricordo speciality
Calamaretti ripieni alla griglia
A characteristic Catania modest food is calamari - tender, tasty, and light, the most noble of molluscs. The preparation is simple; the stuffing is made from breadcrumbs, pecorino, Parmigiano Reggiano, capers, green olives, pine nuts, raisins, and garlic. So stuffed - they look like involtino - they are grilled over moderate heat. An ideal drink is a white or rosé wine from Etna.
