Ristorante Enoteca Del Duca
Cinghiale alla volterrana
Though wild- boar meat dishes are famous and typically Tuscan specialities, this recipe is claimed to be Etruscan as Volterra is proud of its Etruscan origin. The zesty meat of wild-boar with aromatic herbs - such as bay leaves, juniper berries, Cayenne pepper - is browned in a frying pan long enough for a glass of full-bodied red wine to evaporate before braising. This dish is perfect for special occasions, and its taste can be enhanced by a glass of “Giusto alle Balze” wine from the Genuino Del Duca winery belonging to the restaurant proprietor.

Here everything is special, and this restaurant is no exception, thanks to its location in the prestigious Palazzo Inghirami. with its impressive outside and its cave wine cellar.
