Tortelli all’anatra al profumo d’arancia

There is a famous story about Caterina de’ Medici who gave the French the recipe for duck with sweet orange later known as “canard à l’orange”. In actual fact, the stuffing for this tortelli is inspired by this historical episode: meat with strong flavour refined by the bittersweet savour of orange. This example is just to show the approach of the chefs: they take tradition as a point of reference and add creativity as an incentive to explore new tastes.
