In the Trentino region, pinkish trout is typical and has been bred under the ASTRO standard. It can be served à la carpaccio – thinly sliced raw fish with a dressing, or smoked. This recipe involves a traditionally local barley soup so thickened and creamed to be named orzotto paired with pinkish fumé trout and some green salad rocket – arugula - compounding flavours and colours.
