Lavarello del Garda in crosta di patate al rosmarino
Among the fish of the great Alpine lakes, the whitefish is probably the most delicious. It is well sized and can be either grilled or differently cooked. This recipe is very uncommon: the fishbone is removed; next, the fillet is sprinkled with breadcrumbs and rosemary; then, covered with layers of thin-sliced potatoes sprinkled with Trentino Grana cheese; and finally baked. The baking makes a delicious crust on top, that’s why is called in crosta.
