Guinea fowl meat is delicious; some gourmets claim it is even better than pheasant, and the Belvedere chef definitely backs this point of view. Once the favourite Sunday main course, it is prepared stuffing the guinea fowl breast with minced meat and seasoning herbs. "Four seasons" refers to veg in season pairing with the guinea-fowl breast dish: white asparagus from Bassano, peas from Borso del Grappa, black truffles from Colli Berici, and mushrooms from Asiago highlands.
