Ristorante Fiaschetteria Toscana

of Albino Busatto
Ristorante Fiaschetteria Toscana

The restaurant sign dates back to the times of its founder who arrived in Venice early last century. The business taken over by the Busatto family fifty years ago was turned into a kind of sanctuary of Venetian cooking traditions. The restaurant located in Rialto has acquired extra space: a secluded lounge and part of the San Giovanni Grisostomo Church campiello – typical square in Venice, so the front-of-the-house is much larger. (By the way, a golden opportunity of seeing the altarpiece a work of art by Giovanni Bellini set in the church. That’s Venice spell!)

Buon Ricordo speciality

Frittura della Serenissima

Cuisine based on local fish mainly from the lagoon or the Venetian Bay. The recipe of this uncommon "frittura" wants molluscs that are small calamari, cuttlefish, canestrelli - a sort of cockles, and special crabs known as ‘moeche’. Vegetables are supplied by the nearby veg-gardens in Sant’Erasmo and Cavallino: artichokes, fiori di zucca - golden blossoms of zucchini, leeks, and many others. Fresh products that any experienced chef will process into appetizing crunchy ‘treats’.
