Filettino di maiale gratinato al timo
In the Valtellina Mountain range, the local cheese called Casera along with the Wild Thyme that can be picked up everywhere in the area are the main ingredients of this gratin. On the dish a sort of potato pie and some medallions au gratin previously browned in butter all garnished with a sweet demi-glacé sauce. It is a tasty dish pleasing to the eye and enhancing the local flavours. Pair it with a Rosso della Valcalepio wine from the Bergamo valleys.
