Ravioles della Valle Varaita servite nel fuiot

This dish reminds of the Occitan Valleys inhabited by people coming from Provence and still speaking a dialect similar to the ancient ‘d’oc’ language. Local traditions and cuisine are very much rooted on the local produce farmed in the Alps. Anyway, some ingredients of this cuisine such as garlic, salted anchovies are typical of street traders from Provence. The ‘fujòt’ belongs to these traditions as well. It is a small earthenware stove to keep sauces and food hot and set in the middle of the table so that each guest will be in a position to help oneself. That’s how the Ravioles are served with a red Pelaverga wine from Colline Saluzzesi.
