Fagottino di fagiano ai porcini

This dish is a clear-cut example of the cuisine of Danilo Moresco and Luciana, his wife, dedicated to the regional cooking with a whiff of imagination. It consists of pheasant breast - the basic ingredient for the roulade. The stuffing is prepared with porcini mushrooms, stewed bacon, Parmesan, breadcrumbs, and the egg white. Next, the ‘fagottino’ is sautéed in white wine and then simmered in broth. Then, it is sliced and smartly dished out.
