The restaurant is named after a 16th century play a straight “declaration of intention” as the regional cuisine is based on traditions, local products, and last but not least the chef creativity. An ‘eco-friendly’ dish, as Daniele Chimetto loves to point out. In fact, this tasty dish blends different flavours: three varieties of apples with their different textures and sourness, and finely sliced local ham with its strong taste - some slices wrap the apples up. The meal is paired with a side dish of ‘dadolata’, of Asiago cheese, and of celery with its characteristic taste. A many-coloured meal that reminds a "garden".
