Though wild- boar meat dishes are famous and typically Tuscan specialities, this recipe is claimed to be Etruscan as Volterra is proud of its Etruscan origin. The zesty meat of wild-boar with aromatic herbs - such as bay leaves, juniper berries, Cayenne pepper - is browned in a frying pan long enough for a glass of full-bodied red wine to evaporate before braising. This dish is perfect for special occasions, and its taste can be enhanced by a glass of “Giusto alle Balze” wine from the Genuino Del Duca winery belonging to the restaurant proprietor.
