Umbria is known to be the greenest of Italian regions and its cuisine benefits from this. In fact, game is abundant in this region. Pigeon has always been hunted for sport or food. However, nowadays when it comes to cooking, game-bird breeding is used, as meat is tastier and tenderer. This recipe wants the fowl cooked in a pan with juniper berries and a sauce made from fowl liver and gizzard. As far as wine is concerned, a well-textured Sagrantino di Montefalco is recommended to enhance the meal savour.
