As Gubbio, a picturesque town in the Chiascio Valley, was the set of a popular detective TV series of episodes - The Adventures of Don Matteo – anybody could enjoy its beauties. The TV movie was shot in this captivatingly enchanting location as the streets, corners, and panoramas were really appealing. This holds true for the Taverna del Lupo, too. Located in attractive traditional stone vaulted rooms, it offers a menu listing typical meals of the traditional Gubbio cuisine mainly based on homemade pasta, meat, and truffle.

Faraona al ginepro

Guinea fowl is similar to game, but it is tenderer and has a more delicate taste. Lisetta and Rodolfo Mencarelli’s recipe wants the fowl breast attentively grilled to keep it tender. It is paired with a special sauce made from pancetta – sort of bacon, garlic, sage, rosemary, plenty of juniper berries that add the cacciatora tang, and a glass of white wine. Such a simple dish, but delicious indeed!
